Beet and Smoked Goat Cheese Salad

Ingredients
A mix of different beets
6 Oz salad mix
1 Oz smoked goat cheese
12 raspberries
1/2 Oz of traditional balsamic and your favourite olive oil
Preparation
Reserving 1 beet raw, boil the remaining beets in water until tender.
Drain and allow to cool.
Peel and slice beets and season with salt.
Peel and thinly slice 1 raw beets. Keep in water until ready to use.
Toss salad mix with olive oil, balsamic.
Taste for salt.
Arrange greens on a plate and top with raw and cooked beets, raspberries and goat cheese.
