Seared Beef Tenderloin with Balsamic Caramelized Onion

Ingredients
2 5oz (140g) Beef tenderloin
1 Onion thinly sliced
1/2 oz (15ml) EVOO
2 oz (60ml) Traditional balsamic
2 oz (60ml) Demi Glaze
1 Bay leaf
Your favourite vegetable to go with steak
Preparation
First heat a pan with oil.
Add onions and a pinch of salt.
Cook on medium low heat for 15 minutes or until onions are soft and browned.
Add Demi Glaze, bay leaf and cook for 1 minute.
Add balsamic and bring to a boil and immediately turn off.
Taste for salt.
In a separate pan heat oil on high.
Season steaks with salt and pepper.
Cook steak for 4 minutes on each side for medium rare.
Allow steak to rest.
Plate vegetables and top with steak.
Finish with balsamic onions.
